Production Phase
Pomegranates obtained from our gardens are subjected to preliminary analysis in the quality laboratory after they arrive at the production facility. The pomegranates that comply with the quality criteria are accepted into the facility and emptied into the bunker. Foreign substances in the product are selectively separated in selection bands. Pomegranates separated from foreign substances are subjected to washing process until they reach the granulation stage. The skins of the fruit that comes to the granulation stage are taken out of the production line, and the pomegranate seeds are collected in the tank. The pomegranate seeds collected are squeezed with the help of a decanter or press and passed through a shaker sieve. Despite all the hygiene measures taken, fruit juice is pasteurized against the risk of contamination (to ensure food safety and storage). The fruit juice is taken into the clarification tanks and clarified with the help of some enzymes. The product from the clarification tanks to the ultra filter is clarified there. Juice clarified; pomegranate juice is sent to the evaporator in the stage of being concentrated. Pomegranate juice concentrated is filled aseptically or non-aseptically in two ways; In this way, microbiological deterioration that may occur is prevented.
